A new way to savor kinmedai

Nihonbashi Taikin is a restaurant where kinmedai—splendid alfonsino—takes center stage. Our signature dish is Kinme-jū: tender charcoal-grilled kinmedai served generously over rice in a traditional jubako box. Its delicate umami, rich flavor, and smoky aroma come together in a deeply satisfying meal unique to kinmedai. Our theme is “Edo tradition × wholesome dining.” We combine the refined spirit of Edo-era boxed cuisine with the distinctive taste of kinmedai and a thoughtful approach to food that feels good for the body. A new Japanese delicacy beyond unagi. With kinmedai, we set our sights on the top.

Our Story with Kinmedai

Our owner, Tsuchiya, comes from Shimoda in Izu, Japan’s leading port for kinmedai landings. Kinmedai has been a familiar part of his life since childhood.

Its pale pink flesh, rich yet elegant sweetness, tender texture, and relatively few small bones make kinmedai enjoyable for guests of all ages.

We use a special simmering sauce inherited from the inn once operated by the owner’s father in Shimoda. The sauce has been carefully replenished and matured for more than 50 years. We invite you to experience the full character of kinmedai in every dish.
